Buffalo Cauliflower Bites with Ranch Dip

🛒 Ingredients

For the Cauliflower Bites:

  • 1 large head of cauliflower, chopped into florets

  • ¾ cup all-purpose flour (or gluten-free alternative)

  • ¾ cup water

  • 1 tsp garlic powder

  • ½ tsp paprika

  • Salt & pepper to taste

  • ⅔ cup buffalo wing sauce

  • 1 tbsp melted butter (optional for extra richness)

For the Ranch Dip:

  • ½ cup sour cream or plain Greek yogurt

  • ¼ cup mayo

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tbsp chopped fresh parsley or 1 tsp dried

  • 1 tbsp chopped fresh dill or 1 tsp dried

  • Salt and pepper to taste

  1. Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper.

  2. Make the batter: In a bowl, whisk together flour, water, garlic powder, paprika, salt, and pepper until smooth.

  3. Coat the cauliflower: Dip each floret into the batter and place on the baking sheet. Leave space between them for crisping.

  4. Bake for 20 minutes, flipping halfway.

  5. Buffalo sauce: While baking, mix buffalo wing sauce and melted butter in a small bowl.

  6. Toss and bake again: After 20 minutes, remove cauliflower, toss gently in the buffalo sauce, and return to the oven for an additional 15 minutes.

  7. Make the dip: Mix all ranch ingredients together in a bowl. Chill until ready to serve.

  8. Serve immediately with toothpicks or small plates—and plenty of dip!
